What is USB?

USB (Universal Serial Bus) allows the connection of up to 127 devices to a computer. All computers sold today come with at least one USB port. USB is designed to be easy to use.

What versions of USB are supported?  What limitation might there be if USB-1.0 or USB-1.1 were to be used instead of USB-2.0?

Any 1.1 or higher USB host that meets USB specs should be able to talk to any LabJack device.  USB 1.0 was low-speed only, so if you find such a host it would only possibly work with the U12.

Can more than 1 LabJack DAQ devices (e.g., U3) be plugged into 1 PC and be accessible with the interface library?  Let's say my PC has 6 USB ports.  Can I have 6 U3's plugged in and working simultaneously?

Yes, you can have multiple LabJacks connected.  As many as each USB host will support, which is hundreds.  See mention of how to talk to them towards the end of Section 4.3.1 of the U3 User's Guide.
