I have K-Types and some quarter bridges I'd like to measure with our UE9s and LJTIAs. I am unclear of switch settings and vref if needed. Thanks.

Usually you want to use the

Usually you want to use the highest gain possible, so you look at the signal range you expect and see if it will work per Appendix A of the LJTIA Datasheet.  For example, if you know your signal will vary from -0.00194 to +0.00587 volts, then you can use Voffset=0.4V and Gain=x201:
